1、外在特征：高粱脱壳后即为高梁米，子粒呈椭圆形、倒卵形或圆形，大小不一，按颜色又有红、白之分；红者又称为酒高粱，主要用于酿酒，白者用于食用，性温味甘涩，具有和胃、消积、温中、涩肠胃、止霍乱、凉血解毒的功效。
2、内在品质：经农业农村部稻米及制品质量监督检验测试中心检测，蛋白质7.0%—13%；脂肪3.0%—4.5%；单宁1.5%—2.5%；淀粉60%—70%，而且含有丰富的钙、铁、锌、钾、磷、硒等对人体有益的微量元素。“上党高粱”内在各项指标均符合国家标准。
