1、外在感官特征：麻籽的特征花黑吝色，颗粒饱满。麻油油品清澈、透明。低温或者静置底部或有少许絮状析出物，加热，摇晃消失。
2、内在品质指标：榆社小麻油是由小麻仁压榨而成的。榆社小麻油不饱和脂肪酸含量89.9%-92.45%，亚油酸55.38%～58.9%，亚麻酸18.2%～22. 5%，油酸12.98%～15.65%，脂肪酸9.6%～11.6%。还有多种功能性活性成份：钙、铁、锌、等多种对人体有益的微量元素。小麻油最重要的特征是它同时提供人体膳食中必须脂肪酸含量高，特别是具有ω-6族亚油酸与ω-3族α-亚麻酸4 : 1的天然比值，符合国际卫生组织推荐的最佳比值的特点，是最具营养平衡性的油脂。
