宁武莜麦，籽粒呈纺锤型，有腹沟，长0.6—1.1cm，宽0.3—0.5cm，宁武莜麦籽粒白黄色，与异地同品种比较，宁武莜麦黄度较浅；宁武莜麦籽粒整齐饱满，出粉率高达97%，而异地莜麦出粉率最高95%。宁武莜麦加工的面粉白黄色，白度大于异地，筋度高，口感好，吃水多，耐寒耐饥。宁武莜麦药用价值之高，更是其它粮食作物不可比拟。莜麦含高蛋白、低糖，是糖尿病人的极好食品，脂肪中较多的亚油酸可降低胆固醇在心血管中的积累，隆血脂，对动脉粥样硬化性冠心病、高血压均有疗效。莜面中含有丰富的维生素B1、B2、E、叶酸等，可以改善血液循环、缓解生活工作带来的压力；含有的钙、磷、铁、锌、锰等矿物质也有预防骨质疏松、促进伤口愈合、防止贫血的功效。 宁武莜麦含蛋白质≥16.0%、脂肪≥7.0%、膳食纤维≥15.0%、水分≤13.5，每100g宁武莜麦含维生素B1 0.558mg，含叶酸64.1ug。
