1.外在感官特征：高粱的植物学形态可以分为根、茎、叶、花序和籽粒5个部分。根为须根系。茎秆实心，中心有髓。分蘖或分枝。叶片似玉米，厚而窄，被蜡粉，平滑，中脉呈白色。圆锥花序，穗形有带状和锤状两类。颖果呈褐、橙、白或淡黄等色。籽粒卵圆形，微扁，质粘或不粘。谷粒供食用、酿酒（高粱酒）或制饴糖。
2. 内在品质指标：汾阳酿酒高粱淀粉含量≥60%，粗脂肪含量2.5%—4.0%，粗蛋白含量7.0%—9.5%，粗纤维含量1.5%——2.5%，钙含量0.15%—0.20%，单宁含量0.3%—1.95%。4.3安全要求：严格按照“山西春播晚熟区高粱栽培技术规程”进行生产和管理。“汾阳酿酒高粱”合理使用肥料、农药等农业投入品，严禁使用国家明令禁止使用的高剧毒、高残留农药，严格执行农药使用安全间隔期。在收购前15天，对生产基地随机抽取样品进行农残和重金属检验，符合安全标准才准许出售、交易。
