平遥长山药亦称山药、薯蓣(Dioscorea opposita)系多年生缠绕藤本，地下具圆柱形肉质块茎。其块茎是一种食品，亦可入药，是健脾、养胃、益气的药品。长山药主产地在海拔150-1500米左右，块茎肉质肥厚，直径2-7厘米，外皮黑褐色，外皮黄褐。平遥长山药是地理标志产品，也是历史悠久的著名特产，尤以岳北村一带所产长山药质地优良
