羊肉汤是一道菜品，制作原料主要有羊肉、辣椒油、胡椒面、盐、等，汤汁发白，肥而不腻，无膻味，在全国各地均有各具特色的地方小吃。
主要将羊骨头一起投入大锅里熬汤，再将切成砣的新鲜羊肉与清洗干净的羊杂一起投入汤锅中煮。煮熟后捞起来沥干，然后切成薄片放入滚开水里一氽，再倒入汤碗中，冲入滚烫雪白的羊汤水，撒上碧绿的葱花，一碗热气腾腾，香气四溢的羊肉汤就做成了。配上一个由辣椒油、花椒面、盐、味精等调料调配的蘸碟就成羊肉汤。
