（1）外在感官特征：曲沃麦茬羊肉的胴体羊肉的品种有两种：绵羊肉和山羊肉，正常的羊肉颜色为红色，山羊肉色泽较绵羊的红， 绵羊肉的规格标准把绵羊胴体分为四级，山羊桐体的分级按肌肉发育程度和肥度，山羊肉分为三级。曲沃麦茬羊肉肉质细嫩，味美多汁，膻味小，食用时味香而不腻口。
（2）内在品质指标：曲沃麦茬羊肉经天津普尼测试公司检测得含蛋白质：15-25g/100g、脂肪：1-8g/100g、钾：100-500 mg/100g、钠：10-100 mg/100g、磷：100-300 mg/100g、不饱和脂肪酸：0.5-5 g/100g，属高蛋白，低脂肪、低胆固醇的绿色食疗保健食品。
