壶瓶枣皮薄、肉厚、味甜、核小，是生食的良种，制成干枣和酒枣更佳。果重19g，长倒卵形，皮薄，深红色，肉厚，质脆，汁中多，味甜。内在品质指标：经分析，其营养价值高于同类产品：颜色深红，单果平均重20g，大果50g以上，有“八个一尺，十个一斤”之美称。壶瓶枣营养丰富，每百克鲜果肉中含糖约30-50g，蛋白质约3.5g-4.2 g，钙约38mg -41mg，磷约20mg -23mg，铁约0.4 mg -0.5mg，含有各种有机酸和维生素，尤其是维生素C的含量达380-600mg，居百果之首。壶瓶枣制干后，肉质细腻，久贮不干，制干率57.2%，干枣含糖量71.4%，其与普通枣相比有较大差距。质量安全规定：兴谷牌太谷壶瓶枣的行业执行标准GB/T5835-2009，生产许可证号：QS/140717020029，同时在生产过程中，严格按无公害生产标准进行生产，建立了《太谷壶瓶枣生产操作规程》、《农产品生产质量技术控制措施》、《基地负责人职责》、《内检员职责》等。
