1.外在感官特征：赵康辣椒以三樱椒为主栽品种。三樱椒又名朝天椒天鹰椒、望天椒。一是形美，植株生长紧簇，辣椒大小均匀，果皮油亮，色泽深红。二是味浓，辣中有香，香中有甜，综合品质极好，属椒中佳品，生熟食用都可，味美无比。
2.内在品质：赵康辣椒营养价值很高，堪称“蔬菜之冠”。据分析，它富含钙、磷、铁、维生素B1、B2、辣椒素等成分，品质优良。其中辣椒素约0.72g/kg、维生素B1约0.34mg/100g、维生素B2约0.76mg/100g、铁约4.08mg/100g、钙约139mg/100g、磷约340mg/100g。符合深加工和直接食用要求。
3.安全要求：赵康辣椒生产产品符合中华人民共和国农业行业标准《无公害食品辣椒》的安全指标，在包装，标识上须符合农业部《农产品包装和标识管理办法》，进入市场的必须遵守《农产品质量安全法》及其它法律法规的有关规定；瓦楞纸箱按GB6543的规定执行， 塑料袋按GB4456和GB588—89的规定执行，塑料箱按GB8868—88《蔬菜塑料周转箱》执行。
